Make Your Favourite Takeaway Meals Healthier

Chicken Curry

Ingredients:
• 2 teaspoons extra-virgin olive oil
• 1 small yellow onion, chopped
• 2 cloves garlic, minced
• 2 teaspoons curry powder
• 1 400g tin diced fire-roasted tomatoes, drained
• 1 container plain Greek yogurt, single serving size
• 125ml milk
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1/8 teaspoon cayenne pepper, optional
• 450g cooked chicken, chopped

Instructions:
• Heat olive oil in a large skillet over medium heat.
• Add onion and sauté until softened.
• Add garlic and sauté another 30 seconds.
• Stir in curry powder, diced tomatoes, Greek yogurt and milk.
• Season with salt, pepper and cayenne.
• Bring to a low simmer and cook until slightly thickened.
• Stir in chicken until warmed through.
• Serve hot with fresh chopped parsley or cilantro and chopped peanuts.

Spaghetti Bolognese

Ingredients:
• 400g lean beef mince
• 1 onion diced
• 2 cloves garlic, crushed
• ½ cup button mushrooms finely diced
• 2 large carrots grated
• 1 400g tin diced tomatoes
• 1 tablespoon tomato paste
• ½ cup of salt reduced stock
• 1 handful of chopped parsley post cook
• salt & pepper
• oil spray
• 35g dried pasta per person
• grated parmesan

Directions:
• Spray a pan with oil and fry the onion and garlic until soft.
• Add carrots and mushrooms and lightly fry.
• Add in the mincemeat and cook until brown.
• Add diced tomatoes, tomato paste and stock and bring to a boil.
• Reduce heat and simmer for around 10-15 minutes.
• Cook the pasta as per the packet instructions.
• Stir in the parsley into the sauce and serve with the pasta.
• Top with grated parmesan.

Chilli Con Carni

Ingredients:
• 1 tsp olive oil
• 1 large onion, finely chopped
• 1 green pepper, chopped
• 3 cloves garlic, minced
• 1 kg ultra-lean beef mince
• 4 g oregano
• 5 g smoked paprika
• 10 g chilli powder
• 5 g cumin
• 500 ml beef stock
• 250 g red kidney beans, drained and rinsed
• 400 g chopped tomatoes
• 10 g tomato puree

Directions:
• Heat a large pan over a medium heat and add the olive oil, onion, garlic and pepper.
• Cook until the onion starts to become translucent.
• Add the mince into the pan and cook until it’s been browned.
• Add all of the remaining ingredients, reduce the heat and simmer for 30 – 40 minutes until the sauce has thickened.
• Serve hot.
